French Cooking

Traditional and Easy Recipes

I couldn't forget My Mom's meals, the real French Cooking. We lived in a small village one hour from the big city of Paris. We spend each day few hours at the table. Eating is a part of the French Culture .

You don't need to go to one of Paris Cooking Schools . Traditional French dishes are never to complicate. You can easily do it and surprise your friends.

WHAT TO EAT FIRST

If you travel to France or you'd like to do a French meal at home, courses are served like that:

  • Aperitif -A drink to start before dinner
  • Hors d'oeuvre -Sometimes we have 2 one cold and one hot after
  • Plat principal -main course
  • Salade -green salad
  • Fromage - cheese
  • Dessert -dessert
  • Cafe -coffee dark and small
  • Digestif -digestive is a drink like Cognac, cointreau

THE TABLE

French people do not eat on the run. A meal is something you should enjoy. You must seat at the table with a certain amount of Savoir-Vivre, good table manners .

You'll put some bread pain on the table at every meal. Go to your bakery and ask for a baguette.

Also don't forget to choose the right wine with your meal!

AUTHENTIC RECIPES

Soupe a l'oignon -Onion Soup

  • 1L ½ broth
  • 250g onions
  • 60g. butter
  • 80g flour

Chop onions, saute in hot butter until what they havetook a beautiful golden color. Sprinkle with flour, let brown,pour the hot broth and cook for 10 minutes. Season with salt and pepper.We can pass the soup to remove the onion slices and pour into the tureen over slices of bread.

Onion Soup

Coq au vin -chicken in red wine

  • coq 1kg 500
  • 1 hour cooking
  • 5 cl. Oil
  • 2 cloves garlic
  • 50g butter
  • ½ liter red wine
  • 30g onions
  • 100g bacon
  • 50g flour
  • 185g mushrooms
  • 1 dl cognac
  • 100g onions

Cut out the chicken raw. Fry the pieces and onions in oil and butter. Sprinkle with flour, brandy flambe, pour the red wine and seasoning and put the garlic finely chopped. Cook for one hour. Let cool overnight. Reheat a slow fire before serving, adding the bacon (cut in small pieces), fried onions, mushrooms cooked separately. Serve garnished with straw potatoes.

Coq au vin

Amandine -Almond cake

  • 175g almond powder
  • 175 g sugar
  • 175g flour
  • 75g butter
  • 4 eggs
  • ½ teaspoon vanilla
  • pistachios

Working in a bowl the sugar, 4 egg yolks and vanilla. When the composition became slight, add the almonds, flour and the egg whites until stiff then warm melted butter last. To this composition in a bunt mold butter and flour.; cook a moderate oven. After cooling the cake fondant icing white and sowing on the top chopped pistachios.

Creme brulee

Another delightful French dessert is the Creme brulee . French Cooking could be simple.
